CREOLE CATFISH 
2 lb. catfish
1/3 c. chopped green pepper
2 tbsp. snipped parsley
1 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. ground red pepper
1 med. onion, chopped
1 clove garlic, crushed
1 (28 oz.) can whole tomatoes
3 c. hot cooked rice

Heat oven to 450 degrees. If fish fillets are large, cut into 6 serving pieces. Place in ungreased rectangular baking dish 11 x 7 x 1 1/2-inches. Mix remaining ingredients except rice; break up tomatoes. Pour over fish.

Bake, uncovered, spooning tomato mixture over fish occasionally until fish flakes very easily with fork, 25-30 minutes. Serve over rice. Garnish fish with lemon slices sprinkled with snipped parsley if desired. Makes 6 servings. Contains 265 calories per serving.
