HILLSIDE BARBECUE CATFISH WV
STYLE
 
Gather 2 lbs. or more fillets of catfish
1 (8 oz.) tomato sauce
1/4 c. or more minced onions
1 clove garlic or 1 tsp. minced garlic
2 tbsp. lemon juice
10 drops Tabasco sauce (or more to taste)
1/4 tsp. dill weed or seed (your choice)

Place in saucepan tomato, onion, lemon juice, Tabasco. Heat over low heat 10 minutes. Remove and refrigerate 1/2 hour to cool. Marinate the fish (could start this day before). Cover the fish with sauce, well coated. Cool.

Place on thick aluminum foil in broiler pan 3-5 inches away from flame, 3-5 minutes each side. Continue to baste with marinade. This can also be done on the outside grill.
