MARINARA SAUCE 
2 lg. cans plum tomatoes
1/4 c. oil
1 clove garlic
1 med. onion, sliced
2 tsp. oregano
3 tsp. parsley
2 tsp. basil
1 tsp. sugar (opt.)
Salt to taste

In saucepan, saute onions and garlic in hot oil until soft. Add tomatoes and spices. Simmer for 2 hours.

This is a meatless sauce and can be used with spaghetti. It is also a base for the following:

RED CLAM SAUCE:

Fresh clams or 1 can baby clams
1/4 c. white wine
1/2 c. clam juice

CALAMAIR SAUCE (SQUID):

Add squid which has been cleaned, cut into 1/2" round circles, simmer for 1/2 hour longer. Substitution for squid use lobster meat, crab meat and shrimp.

MEAT SAUCE:

Add fried sausage, meatballs or country style pork ribs.
