APPLE CAKE PIE | |
5 lg. apples, cored and thinly sliced 1 tsp. lemon juice 3/4 c. sugar 1/4 c. butter 1 egg, beaten 1/2 c. sifted flour 1/2 tsp. baking powder 1/8 tsp. salt Place apples in a well-greased 10-inch pie pan, sprinkle with lemon juice; cover with 1/4 cup sugar. Cream together butter and remaining 1/2 cup sugar; add egg and mix. Sift together flour, baking powder and salt; mix with creamed mixture. Spread over fruit. Bake in moderate 350 degree oven for 45 minutes. Serve hot or cold, with thin custard sauce or whipped cream. Makes 8 servings. CUSTARD SAUCE: Combine 3 beaten egg yolks, 1/4 cup sugar and dash of salt. Stir in 2 cups scalded milk. Cook over hot water, stirring constantly, until mixture coats spoon. Add 1 teaspoon vanilla. Chill. Makes about 2 1/2 cups. |
