CHICKEN STRATA 
8 slices day-old white bread
2 c. diced cooked chicken or turkey
1/2 c. chopped onion
1/2 c. chopped green pepper
1/2 c. finely chopped celery
1/2 c. mayonnaise
3/4 tsp. salt
Dash pepper
2 slightly beaten eggs
1 1/2 c. milk
1 can condensed cream of mushroom soup
1/2 c. shredded sharp process American cheese

Butter 2 slices bread; cut in 1/2 inch cubes and set aside.

Cut remaining bread in 1 inch cubes; place HALF of unbuttered cubes in bottom of 8x8x2 baking dish.

Combine chicken, vegetables, mayonnaise and seasonings; spoon over bread crumbs. Sprinkle remaining unbuttered cubes over chicken mixture.

Combine eggs and milk; pour over all. Cover and chill for 1 hour or overnight. Spoon soup over top. Sprinkle with buttered cubes. Bake in slow oven, 325 degrees, 50 minutes or until set. Sprinkle cheese over top last few minutes of baking. Makes 6 servings.
