PUFFED CAULIFLOWER 
1 med. cauliflower
1/4 c. butter
2 tbsp. flour
1 c. milk
Salt and pepper
1/4 c. bread crumbs, flavored or regular
3 eggs, separated
1 c. grated cheese

Wash cauliflower, remove stalk and divide into flowerets. Cook in boiling water until done. Drain.

In a pan, heat butter and add flour. Stir over low heat 2 minutes. Remove from heat and gradually add milk. Stir until smooth. Return to heat, stir until boiling. Add salt, pepper and most of bread crumbs. Stir in egg yolks, cheese and cauliflower. Beat egg whites until fluffy, fold into mixture. Put mixture into greased dish and sprinkle remaining crumbs on top. Bake until brown and risen, 400 degrees for 30 minutes.
