1 qt. whole strawberries 1 (20 oz.) can crushed pineapple (drained) 2 tbsp. freshly squeezed lemon juice 2 or 3 tbsp. grated orange peel 1 (1 3/4 oz.) fruit pectin 5 c. sugar Crush strawberries, put in large pot. Add all other ingredients except sugar. Bring mixture to boil, then add sugar. Place on high heat and bring to full rolling boil. Boil hard one minute. Remove from heat. Stir and skim while cooling. Ladle into hot sterilized jars. Cover with hot paraffin, seal. Yields about 6 (1/2) pints. |
