CHERRY NUT CAKE 
2 1/2 c. sifted flour
1 1/2 c. sugar
3 1/2 tsp. baking powder
1 tsp. salt
1/2 c. shortening
3/4 c. milk
1/4 c. maraschino cherry juice
1 tsp. vanilla
2 tsp. almond extract
3 eggs, unbeaten
18 maraschino cherries, well drained and finely chopped (more if desired)
1/2 c. chopped walnuts

Sift flour, sugar, baking powder, and salt into mixing bowl. Add shortening. Combine milk and maraschino juice. Add 3/4 cup of this liquid. Add flavoring extracts. Beat 2 minutes with electric mixer, scraping sides of bowl. Add remaining liquid add eggs and beat for two more minutes at low speed.

Add cherries and nuts and blend by hand. Pour into greased and lightly floured baking pan and bake in moderate 350 degree oven for about 1 hour or until done.

This recipe will make two 9 inch layers or one large cake. Could use 9 x 11 x 2 inch deep or angel food pan. If two 9 inch layer pans are used, the baking time will be about 40 minutes.
