SOPAPILLAS 
2 c. flour
1/2 tsp. salt
3 tbsp. sugar
2 1/2 tsp. baking powder
2 tbsp. lard or shortening
3/4 c. warm water
Oil for frying

Sift flour, salt, sugar, and baking powder together into a mixing bowl. Cut in the lard until the mixture has the consistency of coarse oatmeal. Gradually add the water, mixing until you have stiff dough. Add more flour, if necessary.

Turn the dough onto a floured board. Knead for 3 to 4 minutes or until it is smooth and no longer sticky. Cover and set aside for 30 minutes. Heat 2 inches of oil in a heavy saucepan to 385 degrees. Drop squares of dough into oil and fry, turning several times until golden brown. Drain on paper towels. Sprinkle with powdered sugar, cinnamon, and sugar or serve warm with honey.
