CORN FRITTERS 
1 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. sugar
1 egg, slightly beaten
1 tbsp. melted shortening
1/2 c. milk
2 c. (12 oz. can) whole kernel corn, drained
Fat for deep fat frying

Mix and sift flour, baking powder, salt and sugar. Beat egg, melted shortening and milk together with a rotary egg beater. Add corn, and combine with dry ingredients, mixing well. Drop by spoonfuls into hot deep fat (365 degrees) and fry 3 to 5 minutes or until golden brown. Drain on unglazed paper. Serve piping hot as vegetable, or serve as luncheon dish, with maple syrup and crisp bacon curls. Makes about out 12 fritters and serves 6.
