CAJUN CHICKEN 
1 onion, chopped
2 tbsp. butter
2 cloves garlic
1 green pepper, sliced
2 cans Rotel tomatoes
2 lb. shrimp or 4 chicken breasts, skinned and deboned

Simmer onions and garlic in butter. Add rest of ingredients. Save green peppers and add last 5 minutes of cooking. Simmer 30 minutes and serve over brown rice.
