APPLE NUT COFFEE CAKE 
1/2 c. butter
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 c. sour cream
2 c. peeled finely chopped apples

TOPPING:

1/2 c. maple syrup or honey
3 tbsp. butter
1/2 c. sunflower seeds

Heat oven to 350 degrees. In large bowl, cream together butter and sugar. Add eggs and vanilla, beat well. Combine flour, baking powder, soda, salt; add to creamed mixture alternately with sour cream. Fold in chopped apples. Spread batter in greased and floured 13 x 9 inch baking pan. Bake at 350 degrees for 35 to 40 minutes until golden brown and center springs back lightly when touched. Heat butter and syrup together, add nuts and pour over baked cake.
