CRANBERRY ORANGE HOLIDAY BREAD 
4 c. all purpose flour
2 c. sugar
3 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
4 tbsp. shortening
2 tbsp. grated orange peel
1 3/4 c. orange juice
2 eggs, well beaten
2 to 2 1/2 c. chopped cranberries
1/2 to 1 c. chopped nuts (optional)

Preheat oven to 350 degrees. In bowl, mix together flour, sugar, baking powder, baking soda and salt. Stir in eggs, orange juice, orange peel, shortening. Mix until well blended. Stir in cranberries and nuts. Turn into aluminum mini loaf pans (8 to 9) 1/2 full (grease bottom of pans only). Bake 35 to 40 minutes. Test with toothpick. Cool 15 minutes.

Wrap in foil or cute saran wrap, tie with ribbon or bows, and wish someone a Happy Thanksgiving or Merry Christmas!
