COLD BORSCHT 
1 sm. onion
1 tsp. sugar
1 can shoe string beets
Apple cider vinegar to taste
1 sm. cucumber, sliced
Sour cream or plain yogurt
Beef broth or bouillon (opt.)

Finely dice onion and mash it with rounded end of soup spoon in bottom of bowl. Add vinegar to taste. Add beets and bouillon plus pint of water. Bring to a boil. Cool, add sliced cucumbers. Refrigerate until needed and serve with dollops of sour cream or yogurt.
