7 c. flour 1/4 c. baking powder 1/2 lb. shortening 2 c. sugar 6 eggs 2 tbsp. flavoring Sift flour and baking powder. Set aside. Melt shortening. Set aside. Beat eggs until foamy. Add sugar to eggs and beat well. Add cooled shortening and flavoring to egg mixture. Add flour and mix well. If dough is sticky, add a little more flour. Dough should be soft but pliable. Pinch dough into small pieces size of walnut or smaller and cook approximately 1/2 minute or until golden brown. I usually take a piece of dough and roll it with my hands on the table like a cigar. Then pinch off pieces about the size of half a walnut to get cookies the size I gave you. This recipe will make about 125-150 depending on size. As far as flavoring, the original recipe calls for 2 teaspoons. I prefer the tablespoons. You can adjust to your own preference. I usually use butter for my shortening. Cook in Pizzelles Iron. |
