CARAMEL PIE 
1/2 cup sugar
3 eggs, separated
1 cup milk
1 cup sugar
1 heaping tbsp. flour
1/2 stick butter
1 tsp. vanilla

Brown 1/2 cup sugar in a heavy skillet. Beat egg yolks slightly then combine with one cup sugar, milk and flour. Add the egg-milk mixture to the caramelized sugar very slowly. Cook over medium heat until the sugar dissolves. The mixture will thicken as it cooks. Add butter and vanilla. Pour into a 9 inch baked pie shell. Top with meringue.

Meringue:

3 egg whites at room temperature
1/4 tsp. cream of tartar
6 tbsp. sugar

In medium bowl, beat egg whites and cream of tartar until soft peaks form when batter is raised. Gradually beat in sugar, 2 tbsp. at a time, beating well after each addition. Continue to beat until stiff peaks form when batter is raised. Spread meringue over filling and bake 5-7 minutes or until meringue is golden.
