PECAN DELIGHT PIE | |
2 lemons 4 egg whites 1 c. sugar 1 tsp. baking powder 1/4 tsp. vanilla 2 c. saltine crackers 3/4 c. pecans, chopped 1 1/2 to 2 c. whipping cream 1/4 c. chopped pecans Whip egg whites on medium speed until soft peaks form; add sugar gradually. Add baking powder while beating. Add 3 teaspoon lemon juice and 1/4 vanilla. Mix well. Add crushed saltine crackers, pecans fold in. Gently fold in; pour in greased 9 inch pie pan. Bake at 300 degrees for 30 minutes until almost firm. Remove from oven. Cool upside down. Add whipping cream to cooled pie. Garnish in pecans and lemon slices. |
