PUMPKIN CHEESECAKE PIE 
1 (8 oz.) pkg. cream cheese, softened
1/4 c. sugar
1/2 tsp. vanilla
1 egg
1 1/4 c. canned pumpkin
1/2 c. sugar
1/4 tsp. ginger
1 tsp. cinnamon
1/4 tsp. nutmeg
Dash salt
1 c. evaporated milk
2 eggs, slightly beaten

Mix together softened cream cheese, 1/4 cup sugar and vanilla. Add egg; mix well. Spread on unbaked 10 inch (or deep dish) pie shell.

Combine pumpkin with sugar and spices and salt. Add milk and eggs; mix well. Carefully pour over mixture in shell. Bake 350 degrees for 1 hour or until set. Cool. Brush with maple syrup and garnish with nuts and whipped cream if desired.
