PUMPKIN SQUARES 
4 eggs
1 c. cooking oil
2 c. flour
1 tsp. salt
1 2/3 c. sugar
1 (16 oz.) can pumpkin
2 tsp. cinnamon
1 tsp. baking soda

Beat eggs, pumpkin, sugar and oil in large bowl until fluffy. Mix dry ingredients together; add to pumpkin mixture slowly and mix thoroughly as you go. Spread in ungreased 15x10 inch jelly roll pan.

Bake at 350 degrees for 25-30 minutes or until toothpick comes out clean. Will puff way up while baking but will flatten back down. Serve plain, sprinkle with powdered sugar, or frost with cream cheese frosting. Cut into squares. Makes 50.
