ALBONDIGAS 
1 lb. ground beef
1 egg
2 tbsp. flour
1 1/2 tsp. salt
1 tsp. pepper
2 tbsp. oil
2 minced garlic cloves
1 med. onion

Combine first 5 ingredients and form meatballs. Brown in oil or microwave. Saute garlic and onion in oil.

Mix all ingredients and simmer 25-35 minutes: 1 qt. beef broth 1/2 c. raw rice 2 tbsp. chopped cilantro

Since microwave ovens vary in power, you may need to adjust your cooking time.
