3/4 lb. ground beef 3/4 lb. ground pork 1/4 c. rice 1 egg 1 tbsp. minced cilantro (Chinese parsley) Salt and pepper to taste 2 qts. beef broth (made from canned and instant beef broth) 1 tomato 2 med. carrots, cut in sm. chunks 4 to 6 sm. whole onions (boiling), sliced Cilantro sprigs Combine beef, pork, rice, minced cilantro, and salt and pepper to taste and mix well. Form into small meatballs and set aside. Bring broth to boil. Add tomato, carrots, and onions and salt and pepper. Simmer 15 minutes. Carefully add meatballs to boiling liquid and simmer 30 minutes. Serve meatballs with broth and vegetables in soup bowls. Garnish with cilantro sprigs. |
