ALBONDIGAS 
1 lb. lean ground beef
1 lg. white onion, finely chopped
1 bunch cilantro, leaves only, chopped finely
1-3 cloves garlic, smashed
1 c. rice (not instant type)

Mix meat, onion, cilantro and rice together. Make into meatballs. Cover while cooking (add water). Throw in garlic and cook for an hour or until the meat is done. (You can also add a can of tomato sauce for color if desired.)
