MINI MEAT LOAVES 
1 lb. ground beef
1 tbsp. prepared yellow mustard
1 sm. onion
6 (1 inch) cubes sharp cheddar cheese
1/4 c. instant mashed potato flakes
1/4 c. and 1 tbsp. ketchup
dash of pepper

Preheat oven to 350 degrees. In large bowl, stir together beef, potato flakes, mustard, 1/4 cup ketchup, onion and pepper. Divide meat mixture into 7 equal pieces. Place a cheese cube in the center of each piece of meat and roll into a ball. Place each meatball into a 2 1/2 to 3 inch cup of a muffin pan. Brush tops of meat with the remaining ketchup. Bake 25 to 30 minutes or until meat is done. Remove from muffin pan. Serves 6.
