MIXED VEGETABLE CASSEROLE 
1 bag frozen mixed vegetables
1 c. sour cream or 1 c. mayonnaise
1 c. celery
1 c. onion
1 can whole kernel or shoepeg corn
1 can water chestnuts, sliced
1 1/2 c. grated cheese
1 pkg. Ritz crackers, crushed
1 stick butter, melted

Cook mixed vegetables until almost done. Drain and toss with other ingredients. Pour in dish and sprinkle crumbs on top; pour melted butter over all. Bake at 350 degrees for 25 or 30 minutes.
