BUTTERMILK COCONUT PIE 
1 1/2 c. sugar
2 tbsp. all-purpose flour
1/2 c. butter, melted
3 eggs, beaten
1/2 c. cultured buttermilk
1 tsp. vanilla extract
1 can (3 1/2 oz.) flaked coconut, divided
1 unbaked 9" pastry shell

Combine the sugar and flour in a large bowl. Add the melted butter, eggs, buttermilk, vanilla and 2/3 of the coconut. Mix well. Pour mixture into shell. Sprinkle with remaining coconut. Bake at 325 degrees for 1 hour and 5 minutes or until set.
