ZUCCHINI BREAD 
3 eggs, beaten
3/4 c. oil
2 c. sugar
2 c. grated raw zucchini squash
2 c. flour
1/4 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
3 tsp. vanilla
1 c. chopped nuts

Blend oil and sugar. Add beaten eggs and zucchini. Sift dry ingredients together and add chopped nuts. Mix well and add vanilla. Bake in 2 loaf pans at 300 degrees for 1 hour.
