PERSIMMON PUDDING 
2 c. persimmon pulp
2 c. sugar
2 eggs
1/2 stick butter
1 c. buttermilk plus 1 tsp. salt
1 c. sweet milk
1 3/4 c. flour
1 tsp. baking powder
dash of salt
3/4 tsp. cinnamon

Combine first 4 ingredients. Add remaining ingredients and bake at 350°F until firm, about 45 minutes to 1 hour.
