BANANA OATMEAL COOKIES 
1 1/2 c. sifted flour
1/2 tsp. baking soda
1 tsp. salt
1 c. sugar
3/4 c. shortening
1 egg
1 c. mashed bananas
1 3/4 c. oatmeal
1/2 c. chopped nuts
1 tsp. vanilla

Sift together dry ingredients. Cream shortening and sugar until light and fluffy. Add egg and beat well. Add bananas, rolled oats and nuts, mix well. Add flour mixture. Drop by teaspoonfuls on cookie sheet. Bake at 400 degrees for 15 minutes.
