GREEN TOMATO MINCEMEAT 
12 lbs. tomatoes
12 lbs. apples, chopped
2 lbs. raisins, chopped
3 c. brown sugar
3 c. sugar
3 tbsp. salt
1 1/2 c. vinegar
3 tbsp. cinnamon
3 tsp. cloves
1 1/2 tbsp. nutmeg
Orange peel, if desired

Chop tomatoes and drain juice. Add water to the pulp, scald and drain 3 times. Add apples, raisins, sugars, and salt and cook until clear. Add spices and vinegar and cook until thick. (Scorches easily so keep stirring.) Can in hot scalded jars and seal.
