CREAMY RICE PUDDING 
1/2 c. washed Carolina rice
3 c. water
1 tbsp. butter
1 tsp. salt
2 eggs
1 c. sugar
2 tbsp. vanilla
1 pt. heavy cream plus 1 pt. milk or 2 pt. half & half

Simmer rice in water with butter and salt until stiff (about 1/2 hour). Add 1 pint heavy cream and 1 pint milk (or 2 pints half & half). Cover and bring to a boil; boil 20 minutes, stirring frequently.

In separate bowl, beat eggs with sugar and vanilla. Add to cream mixture and bring to a boil. Remove from stove; cool. Will fill a 2 quart bowl.

Yummy!! So creamy and easy to prepare!! Will be making this again in the future!! I only made a half recipe as I will be the only one eating it, and I used a pint of half and half. It turned out just perfect!!
