SAUSAGE STUFFED THIGHS 
4 oven stuffer roaster boneless thighs
4 breakfast sausage links, precooked
Salt and freshly ground pepper
1 tsp. oregano
1 tbsp. fresh chopped parsley
Flour
2 eggs, lightly beaten
Seasoned bread crumbs

Saute sausages in skillet 5 minutes, turning with tongs. Open thighs flat and sprinkle the inside with equal amounts of salt, pepper, oregano and parsley. Place 1 sausage in center of each thigh and roll up. Dust each thigh with flour and holding thigh together with sausage inside, carefully dip in eggs and coat with bread crumbs. Place in baking pan in preheated 350 degree oven and bake 1 hour.
