SPICY TURKEY THIGH 
2 tbsp. butter
1 1/2 to 2 lb. frozen turkey thigh, thawed
1 med. onion, chopped
2 tbsp. all-purpose flour
1 tsp. salt
1 tsp. dried parsley flakes
1 tsp. cinnamon
1/4 tsp. ground cloves
1/8 tsp. pepper
Dash Tabasco sauce
1 bay leaf
2 c. water
1/4 c. pecan halves

1. Melt butter in freezer-to-range glass ceramic Dutch oven over medium heat. Add meat and brown on all sides. Stir in onion; cook until golden brown. Blend in flour and seasonings; stir in water and pecans.

2. Microwave-bake, covered, at 325 degrees for 15 minutes.

3. Bake 50 to 55 minutes or until meat is fork tender. 5 to 6 servings.

TIP: If a glass ceramic Dutch oven is not available, brown meat and onion in frying pan. Then transfer to 4 quart glass casserole. Easily adapts to regular ovens or regular microwave ovens.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Excellent. I used celery and garlic instead of onion and rice flour instead of wheat flour. It is fabulous. I do think next time I'll take the skin off. Although when I reheat it, the skin will crisp up. This would be good with boneless meat too. Interesting spice combo, kind of an exotic flavor. A nice change, definitely will make again, so easy too.

This is one of my go to recipes, especially for company. I use skinless boneless chicken or what ever is available. I substitute rice flour. I also add finely diced carrots, celery and what ever veggies I have. Most recently fennel. Love this dish, such an unusual flavor from our weekly regulars.
