APPLESAUCE COOKIES 
1 c. firmly packed brown sugar
2/3 c. butter, softened
2 eggs
1 3/4 c. flour
1 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. applesauce
1 c. quick cooking rolled oats
1 c. chocolate chips or nuts

Beat together the brown sugar, butter and eggs until light and fluffy. Stir together the flour, baking powder, cinnamon and nutmeg; stir into the beaten mixture. Add the applesauce, oats and chocolate chips (or nuts); stir to combine. Drop by 1/4 cupfuls onto greased cookie sheets, flattening slightly with spatula and allowing room for cookies to spread. Bake at 375 degrees for 12 to 15 minutes. Cool on wire racks. Makes approximately 20 (4 inch) cookies.
