MRS. P.'S GINGER COOKIES 
1 c. sugar
2 1/2 c. sifted flour
1/2 tsp. salt
1/2 tsp. allspice
1/2 tsp. cloves, optional
1 tsp. cinnamon
1 tsp. ginger
3/4 c. shortening
1 egg
4 tbsp. molasses
2 tsp. baking soda

Add soda and spices to flour and resift. In separate bowl, blend together shortening and sugar. Add egg and stir until well blended. Add flour and spices, mixing well. Add molasses and blend until dough is thoroughly mixed. Shape into balls, rolling with hands, then roll in sugar until covered.

Put on greased cookie sheet, allowing room for expansion. With five fingers together, press fingertips into the top of each cookie before baking. Bake at 350 degrees for 10-12 minutes.
