LADYFINGERS 
1/3 c. sugar
3 eggs, separated
3/4 c. all-purpose flour
1/4 tsp. baking powder
1/8 tsp. salt
3 tbsp. water
1/2 tsp. vanilla
1/4 tsp. lemon extract
1/4 tsp. cream of tartar
1/4 c. sugar

Heat oven to 350 degrees. Grease and flour 2 baking sheets. Beat 1/3 cup sugar and the egg yolks in small mixer bowl on medium speed until very thick and lemon colored, about 3 minutes. Beat in flour, baking powder, and salt alternately with water, vanilla, and lemon extract on low speed.

Beat egg whites and cream of tartar in large mixer bowl until foamy. Beat in 1/4 cup sugar gradually; continue beating until stiff and glossy. Fold egg yolk mixture into egg whites. Shape with teaspoon or pastry bag into fingers, 3 x 1 inch, on baking sheets. Bake until light brown, 10 to 12 minutes. 3 1/2 dozen ladyfingers.
