BEANS FOR A MOB | |
3 lb. Great Northern navy beans Water 3 lg. onions, sliced 3 (10 1/2 oz.) cans tomato soup 3 c. brown sugar 2 lb. salt pork 1 sm. ham (about 2 to 3 lb.) Salt (optional) Soak beans in large roasting pan with plenty of water overnight. Drain. Add water to cover and boil gently until the skin cracks on a bean when you blow on it. Remove part of the water and reserve for later if needed. Add onions, soup and part of brown sugar. Bake about 3 hours and taste. Add more sugar, if desired, and salt, if needed. Wash salt pork, remove rind and cut into small pieces the meat and fat. Cut ham into small pieces after removing the rind and add to the beans. Cover and bake at 325 degrees for 5 to 6 hours. Add more liquid, if necessary. Serves 16. |
