WAFFLES 
1 1/3 c. self-rising flour
2 eggs, separated
1/4 c. butter
1 c. milk
1 tsp. sugar

Sift flour, measure and sift again. Beat egg yolks until light and foamy. Add sugar and shortening; mix. Add milk alternately with flour to egg mixture. Fold in stiffly beaten egg whites. Bake in hot waffle iron. Yield: 6 servings.
