CHICKEN CUTLETS 
chicken cutlets
2 or 3 eggs
1-2 tablespoons fresh parsley, chopped
bread crumbs
nutmeg
salt and pepper
oil

Wash chicken cutlets and pat dry with a paper towel Crack the eggs and mix them in a bowl with a whisk. Add 1/2 teaspoon of nutmeg, parsley and a pinch of salt and pepper to the egg mixture.

Dip the chicken into the egg mixture. On a separate shallow dish, dip chicken into the bread crumbs to coat.

Place in a pan with some oil on a lower medium heat. Fry on both sides, only enough to coat the bread crumbs with oil so they will stick to the chicken.

Then place the chicken on a cookie sheet and bake 350°F for a good 40 minutes.

Serve with any kind of potatoes or vegetables. My family just loves them!

Try layering them with Parmesan cheese, tomato sauce and bake for the 40 minutes. Goes nice with an Italian meal like baked ziti.

I just cooked this and it came out fabulous. I used the Italian flavored breadcrumbs and therefore left out the parsley and nutmeg. Enough flavor came out of the breadcrumbs alone. I placed it on top of spaghetti and covered it in prego!

Nice recipe thank you! I added a little Parmesan cheese and garlic into the breadcrumbs so I left out the nutmeg. Dinner was great. My family loved it.

Love your easy recipe but i did add some Panko this time & I think it was better -plus the extra Parm ? Thanx for your help ! ps I also topped the chicken off w a lemon / caper butter mmm !!
