APPLE BUTTER 
16 c. apple pulp
1 c. vinegar
8 c. sugar
1/4 tsp. salt
4 c. cinnamon
2 tsp. cloves
1 tsp. nutmeg
1 tsp. allspice

Cook over low heat, stirring frequently everything except sugar 1 1/2 hours. Add sugar, continue cooking. When butter is thick and a deep amber color, ladle into hot jars. Boiling water bath 30 minutes.
