OLD-FASHIONED APPLE BUTTER | |
4 lbs. Golden Delicious apples (12 c., pared and sliced) 1 tsp. cloves 1/2 tsp. allspice Juice and grated peel of 1 lemon 1/2 tsp. salt 2 tsp. cinnamon 2 c. apple cider 1/2 c. sugar per cup of pulp Place apples in a large kettle with apple cider. Bring to boil and simmer over low heat about 15 to 20 minutes until apples are tender. Put through sieve and measure pulp. Add 1/2 cup sugar per cup pulp and remaining ingredients. Simmer over low heat 1 to 2 hours or until butter is thick, stirring occasionally. Ladle into hot jars; seal. Makes approximately 5 pints. |
