ZUCCHINI BREAD 
3 eggs
3 c. all purpose flour
1 c. salad oil
2 c. dark brown sugar
2 c. grated, raw unpeeled zucchini
1 tsp. baking soda
1 tsp. pure vanilla
1 tsp. salt
1 c. chopped nuts

Beat eggs. Add oil, sugar, zucchini. Mix well. Stir in flour, salt, and soda. Add in vanilla and nuts. Mix well. Pour into greased and floured loaf pan (9 x 5 x 3 inches). Bake in 350 degree oven for 1 hour. Remove and cool. Makes 2 loaves.
