ZUCCHINI BAKE 
1 med. zucchini, unpeeled
1 can mushroom soup
1 med. onion
Italian bread crumbs
Shredded cheese

Saute sliced zucchini in 2 tablespoons of oil with onion for about 5 minutes or until slightly tender. Place layer of zucchini in baking dish, bread, 1/2 can of mushroom soup and cheese over top. Then add another layer with same ingredients. Top with Italian bread crumbs and bake in 350 degree oven for 30 minutes.
