EL DORADO BEEF 
1 1/2 lbs. ground round
1 onion, chopped
1 tsp. crushed garlic
1 sm. can sliced ripe olives
3 sm. cans tomato sauce
1 pkg. taco flavoring mix
1 pkg. Fritos
1 1/2 c. cottage cheese
1 1/2 c. sour cream
1 can diced Ortega chilies
1 lb. grated Jack cheese

In Dutch oven, brown ground round with onion and garlic. Add olives, tomato sauce, and taco mix. Simmer 5 minutes. In a 9 x 13 inch pan, put Fritos (crushed). Cover with meat mixture. In a bowl, mix together cottage cheese, sour cream, and Ortega chilies. Spread over meat mixture and sprinkle with Jack cheese. Bake at 350 degrees for 45 minutes. Serves 6-7.
