SQUASH FRITTERS 
1 (10 oz.) pkg. frozen sliced yellow squash or fresh
2 eggs, beaten
1/2 c. cracker crumbs
1/4 tsp. pepper
1 sm. onion, diced
Vegetable oil

Cook squash according to package directions. Drain and mash. Combine squash and next 4 ingredients. Pour oil to depth of 2" in a heavy saucepan. Heat to 375 degrees. Drop squash mixture by tablespoonfuls into oil, fry until golden brown, turning once. Drain on paper towel. Serve hot. Yield: about 10 fritters.
