CREAMED ZUCCHINI AND ONIONS 
1 tbsp. butter
1 clove garlic, minced
1 c. finely chopped onion
4-5 med. zucchini, thinly sliced
1 red pepper, seeded, diced
3/4 c. sour cream
1 tsp. dried basil leaves
1 tbsp. red wine vinegar
1/4 tsp. salt
1/4 tsp. pepper
Grated Cheddar cheese
Green pepper, sliced, for garnish

Melt butter in a large skillet. Saute garlic and onion until transparent. Add zucchini and red pepper. Saute about 5 minutes until crisp-tender.

Combine sour cream, basil, vinegar and salt and pepper. Pour mixture over zucchini. Spoon into a 1-quart casserole. Bake at 300 degrees for 15 minutes or until hot.

Serve immediately with grated cheese, if desired. Garnish with green pepper rings.
