APPLE HARVEST CAKE 
1 1/4 c. flour
1 c. whole wheat flour
1 c. sugar
3/4 c. firmly packed brown sugar
1 tbsp. cinnamon
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 c. oil
1 tsp. vanilla
3 eggs
2 c. peeled, finely chopped apples
1 c. chopped nuts

Heat oven to 325 degrees. Generously grease and flour a 12 cup fluted tube pan. Blend dry ingredients together. Add oil, vanilla, eggs, and 1 cup of apples. Beat 3 minutes at medium speed. By hand, stir in remaining apples and nuts. Bake 50 to 65 minutes at 325 degrees or until cake tests done by insertion of toothpick. Cool upright 15 minutes. Turn out on serving plate and cool thoroughly. Then glaze. 16 servings.

Glaze: 1/2 cup powdered sugar, 1/4 teaspoon vanilla, and 1 - 2 tablespoons milk. Mix together and spoon over cake.
