CHOPPED APPLE MUFFINS | |
2 c. flour (3 tbsp.) 1 tbsp. baking powder 1/2 tsp. each salt and soda 1 1/2 tsp. cinnamon 6 tbsp. butter 1 (8 oz.) carton vanilla yogurt 2 eggs 1 c. chopped apples Mix 2 cups flour, baking powder, salt, soda, 1/4 cup sugar and 1 1/2 teaspoons cinnamon. Blend 1/4 cup melted butter, yogurt and eggs with wire whisk. Stir into dry ingredients. Fold in apples. Fill muffin cups 2/3 full. Cut 2 tablespoons butter into 1/4 cup sugar, 3 tablespoon flour and 1/4 teaspoon cinnamon in bowl until crumbly. Sprinkle over muffins. Bake at 350 degrees for 25 minutes; yields 24 servings. |
