HUSH PUPPIES, SOUTHERN STYLE 
2 c. yellow cornmeal
2 tbsp. flour
2 1/2 tsp. baking powder
1 tsp. salt
1 c. milk
1 egg, lightly beaten
3 tbsp. finely grated onion
Vegetable oil for deep fry

Combine cornmeal, flour, powder and salt in a bowl and stir with a wooden spoon just enough to mix ingredients. In a small bowl, combine milk, egg and onion, set aside. Pour enough oil in saucepan to be several inches deep. Heat oil to 360 degrees.

A crust of bread should brown in 30 seconds. Quickly add liquid ingredients to flour mixture and stir thoroughly. Fry puppies in 2 batches, turning after 1 minute. Drain on paper towel.
