CARROT CAKE 
1 1/2 c. sifted cake flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. shredded carrots
1/2 c. orange marmalade
1/4 c. finely chopped pecans
1 c. sugar
1 c. melted Crisco
2 eggs

Preheat oven to 350 degrees. Sift together flour, baking powder, soda, salt, and spices. Add remaining ingredients; blend well. Spread batter in greased fluted 2-quart mold or mini Bundt pan. Bake 40-50 minutes.

ICING:

1 (8 oz.) pkg. cream cheese, softened
1/4 c. butter
2 tsp. vanilla
2 c. confectioners sugar

Beat cream cheese with butter until soft and creamy. Beat in remaining ingredients. Spread frosting on cake.
