PEANUT SHRIMP 
2 tbsp. sliced scallion
1 clove garlic, minced
2 tsp. cooking oil
3/4 c. chicken broth
3 tbsp. peanut butter
1 tbsp. soy sauce
1/2 tsp. finely shredded lemon peel
1 tbsp. lemon juice
1 tsp. chili powder
1/2 tsp. brown sugar
1/4 tsp. ground ginger
20 lg. cleaned shrimp

Combine. Simmer uncovered 10 minutes stirring frequently. Cool. Marinate 20 large cleaned shrimp for 1 hour. Skewer. Grill over hot coals 8 to 10 minutes turning once. Heat marinate - serve for dipping.
